Check out these two recipe options for Thanksgiving, you don't have to give up the foods you love, there are ways to modify them to minimize calories.

Healthy Sweet Potato Casserole with Pecan Oat Crumble

Healthy Sweet Potato Casserole is topped with a pecan and oat crumble for a lightened-up version of your favorite Thanksgiving Day casserole!

  Prep Time  1 hour

  Cook Time  45 minutes

  Total Time  1 hour 45 minutes

  Servings 12 servings

  Calories  317 kcal

Ingredients

Sweet Potato Layer

  • 4 lbs. sweet potatoes
  • 6 Tbsp. maple syrup
  • 3 Tbsp. butter or coconut oil melted
  • 2 eggs
  • ½ tsp. cinnamon
  • ½ tsp. salt
  • ¼ tsp. nutmeg
  • 1 tsp vanilla

Pecan Oat Crumble

  • 6 Tbsp. flour
  • ¾ cup oats old-fashioned, rolled
  • ¼ cup maple syrup
  • 3 Tbsp. butter or coconut oil melted
  • ¾ cup pecans, coarsely chopped
  • ½ tsp. cinnamon

Instructions

  1. Preheat oven to 400 degrees.
  2. Poke holes in each sweet potato with a fork and wrap them in aluminum foil. Bake for 45 to 60 minutes, or until potatoes are cooked completely through.
  3. Once potatoes are cooked and cooled enough to touch, remove the skin.
  4. Whip the potatoes and remaining sweet potato layer ingredients together in a food processor, or until smooth.
  5. Pour sweet potato layer into a nonstick cooking-sprayed 9x9 in baking dish or 2.5-quart casserole dish.
  6. Combine pecan oat crumble ingredients in a medium-sized bowl and mix by hand until just combined.
  7. Top sweet potato layer with pecan-oat crumble and bake in a 350-degree oven for 40-45 minutes, or until top is golden brown and cooked thoroughly. Enjoy!

Mashed Cauliflower with Garlic & Herbs

Prep Time: 10 Minutes

Cook Time: 10 Minutes

Servings: 4 Servings

Mashed cauliflower (cauliflower mashed potatoes) are a healthy, low-carb alternative to traditional mashed potatoes.

Ingredients

  • 1 head of cauliflower
  • 1 tbsp olive oil
  • 2 cloves of garlic minced
  • 1-2 tsp finely chopped herbs (thyme, rosemary, sage, parsley, chives, etc)

Instructions

  1. Trim the leaves off the cauliflower and cut off the florets. Rinse the florets under water.
  2. Heat 1-inch of water in a pot on medium heat and bring to a boil. Place a steamer insert in the pot and add the cauliflower florets. Steam for 6-8 minutes.
  3. While the cauliflower is steaming, heat the olive oil in a small pan on medium heat. Add the minced garlic and cook for 30 seconds, then remove from the heat.
  4. Remove the steamed cauliflower from the pot, drain the water from the pot, then add the cauliflower back in. Add the olive oil, garlic, chopped herbs and any optional items. Use a potato masher or handheld stick blender to mash the cauliflower. Serve immediately.
